If there’s any time of year to guiltlessly sit around eating sweets all day with family and friends, it’s the holidays. And I know quite a few people who couldn’t agree more. Baking cookies is a way to make memories with those you love most during this special time of year.
I’m going to share with you a recipe I received from my aunt who got it from my grandmother while she was still alive. She would bake for her eight children, and it is my duty, as her granddaughter, to bake for the people I love most each holiday season. Taking my dad’s taste buds back to the memory of his mom’s holiday cookies brings me much joy, and I want to share it with all who are willing to try out her recipes. It is fun and easy, and even better if you do it with the people who matter most to you during this wonderful time of year.
Walnut Danties
Crust:
5 oz. cream cheese
2 sticks butter, softened
2 cups flour
Filling:
3 eggs
1 ½ cups brown sugar
1 cup chopped walnuts
1 mini muffin tin
Blend cream cheese, butter, and flour until dough mixture is formed. Take the dough and roll balls the size of walnuts. Place one in each mini muffin tin, greased lightly. Line the sides and the bottom evenly with dough.
Whisk together the eggs and brown sugar. Mix in the chopped walnuts. When all is combined evenly, fill each cup with one teaspoon of filling.
Bake for 25 minutes at 350 degrees. The crust will become a light golden brown and the filling will begin to bubble. When time is up pull the cookies out of the oven and let them cool for at least 2 minutes before removing them from the tins.
